Lentil lasagne

Ingredients
1 large onion, chopped3 cloves garlic, chopped4 carrots, peeled and sliced2 cups red lentils (dry)2 cans tomatoes2 tbsp basil, chopped1 tbsp dried mixed herbs1 tub quark (or other fat free soft cheese)1 small tub fat free cottage cheese100g low fat mature cheddarSalt, pepper and nutmeg
Directions
Fry the onions and garlic in a little spray oil until soft. Add the carrots and lentils; stir in the canned tomatoes, basil, mixed herbs and 2 cups of boiling water. Season. Cook for about half an hour, until the lentils are soft - you may need to add more water.

Meanwhile, beat together the quark and cottage cheese with salt, pepper and nutmeg. Beat in enough skimmed milk to create a saucelike texture.

Layer the cheese sauce, lentil mixture and noodles in a lasagne dish, finishing with a layer of cheese sauce on top. Sprinkle over the cheese. Bake at 180 degrees C for about half an hour, until the cheese is bubbling.
