Rachel's Skinny French Onion Soup

1 small onion chopped small2 boxes beef broth1 tsp butter1 tbsp flour2 slices whole wheat bread chopped4 tbsp low-fat mozzarellasalt and pepper to taste
Melt butter in pot on medium heat. Add chopped up onions, the smaller the better because they will cook faster! Cook onions until they begin to get slightly golden, add a little broth if it starts to dry out. Dust flour onto onions and fry for a few minutes. Add remaining beef broth and bring to a boil. Once boiling, lower heat to med-low and allow to simmer for 30 minutes. Ladle 1 cup into ramikin and top with half a slice of cut up bread. Top with 1 tbsp shredded mozzarella. Bake at 350 C for 5 minutes, or until cheese is melted and becomes golden. ENJOY!
