Pumpkin "Cheesecake"

Ingredients
16 oz. can pumpkin2 packs Jello Sugar Free Pudding mix1.5 c. skim milk24 oz. fat free cottage cheese
Directions
Combine all ingredients in the food processor or blender. Blend until smooth. Chill in the refrigerator and serve!

Another option is to pour into a graham cracker crust and serve that way.

    I added pumpkin pie spice and used Lactaid cottage cheese and almond milk and it came out well. I would definitely make it again. It has the yummy creamy pumpkin flavor I love. Definitely needs the pumpkin pie spice. - 2/3/11
