Apple Cider Vinaigrette

Ingredients
1/4 C. Cider Vinegar 3TApple Juice Concentrate2T Dijon Mustard1T Onions 3/4 tsp Kosher Salt1/2 tsp Black Pepper1/2 green apple 1T Raw Sugar1/2 C. Canola oil
Directions
Place everything in the blender but the oil. Start blending, then slowly add oil.

Makes about 2 cups- 2 T serving

This is great over spinach with chopped apple, candied walnuts, dried cranberries and crumbled blue cheese.
