2-1/2 lb beef chuck roastsalt and pepper to taste1 tbs oil3 c water1 tsp instant beef bouillon4 medium red potatoes, peeled and quartered1 lb carrots, cut into 2-inch pieces1 onion, cut into wedges
Trim fat from meat and allow to stand at room temperature for 20 minutes. Dissolve beef bouillon in water. Pat meat dry with paper towels to remove any moisture.
Rub salt and pepper over the meat. Brown on all sides in a large skillet over high heat, about 4 minutes per side.
Place the roast in the slow cooker and add the bouillon and water, carrots, onion, potatoes, and celery. Cover and cook on Low setting for 8 to 10 hours.
