Mel's Kitchen One-Dish Chicken & Rice

Ingredients
1/2 cup Milk, 2%2 cans Cream of Chicken Soup1/2 tsp Salt1/2 tsp Pepper3 Chicken Breasts (boiled & cubed)1 Onion (diced)1 cup Frozen Peas1/2 Red Bell Pepper (diced)1/2 Green Bell Peppers (diced)2 cups White Rice, medium grain,(cooked)1 cup shredded Cheddar Cheese1/3 cup Miracle Whip salad dressing
Directions
1. Pre-heat oven to350 (325 for high altitude)
2. Spray 9x13 inch baking dish w/ fat free cooking spray.
3. Boil chicken & cook rice.
4. In a med bowl blend soup, milk, salt, black pepper & miracle whip. Mix well.
5. In a separate medium sized bowl combine chicken, onion, peas, bell peppers & rice. Mix well.
6. Combine two mixtures & add half of the cheddar cheese. Mix well.
7. Pour mixture in the baking dish & sprinkle the remaining cheddar cheese on top of the casserole.
8. Cook for 25 minutes.
