Chia Polenta

Ingredients
*Chia seed, 2 tbsp * Milk, 2%, 2 cups * Yellow Cornmeal, .5 cup * Butter, unsalted, .5 tbsp * Salt, 1 dash * Parmesan Cheese, grated, .25 cup (remove)
Directions
Whisk together cornmeal, milk, and chia seeds in saucepan and bring to a boil. Lower heat to medium and stir constantly, about 10 minutes. Mixture should be thick and creamy. Remove from heat; stir in butter.

Transfer polenta to miniature loaf pan. Bake for 40 minutes. Remove and sprinkle cheese on top.

I like to top this with some spicy salsa, but those calories are not included in this recipe.
