Rosemery Potato Leak soup

1 1/2 pounds potatos3 Large Leeks (about 9 0z)2T Butter (i use Earth Balance)Salt/Pepper to taste4 cups vetetable broth3 cups water*milk, water to cream to thin soup if desirted
1. Slice ans wash leeks
2. Wash, Quarter and thinly slice potatos
3, Metl butter in the bottom of a wide pot. , add potatos, leeks and rosemery. and cook on low heat for 10 min.
4. Add broth and water, and some salt.
5. Bring to a boil then turn it down to simmer, until potatoes are falling aprt, about 35 min.
6. press some of the potatoes against the side to thicken the soup up.
7. Thin with additional water or milk,
8. to add fullness you may add a small amount of cream.
