Green Lentil Soup

* Green Lentils, 1 cup * Onions, raw, 1 medium (2-1/2" dia) * Carrots, raw, 2 medium * Pacific Natural Foods Organic Vegetable Broth, 1 cup, 4 serving * baby spinach, 3 cups * Bay Leaf, 1 leave * Salt - Iodized Sea Salt, .5 tsp * Parsley, 1 tbsp * Olive Oil, 1 tbsp * Basil, .31 teaspoon * Rosemary, dried, 1 tsp * *Lemon Juice or umeboshi vinegar (1 TBL)
spread lentils on a flat surface and pick out any stones, then wash and drain them.
in a soup pot, warm the oil over medium heat
add onion and cook 5 mins or until translucent
add carrot and continue to saute 3-5 min
spread lentils on top
add broth and herbs bring to a boil, reduce the heat to low, cover and simmer for 45 minutes or until lentils are tender.
add copped parsley , spinach, salt and lemon or vinegar.
simmer another 2 minutes and serve
