Vegetarian Red Beans and Rice

Ingredients
2 C. dried kidney beans1 large onion, chopped6 large cloves garlic, mashed2 quarts boiling water2 C. TVP granules3 Tbsp. chili powder1 Tbsp. cumin1 C. brown rice2 C. water1 tsp. salt
Directions
Overnight, in 6 cups of water, soak 2 cups dried kidney beans. Drain and rinse well. (Can use canned beans, skip the soaking.)

Cook in kettle with:
Onion, garlic, and 2 quarts (8 cups) boiling water for 45 minutes. Then add:

TVP granules, chili powder, and cumin. Continue cooking until tender, 20-40 minutes. Most of the liquid should have cooked into the beans and TVP. Taste and add salt, if necessary.

Meanwhile, cook brown rice according to package directions.

Mix the cooked rice and beans, taste, add a pinch of cayenne pepper or hot sauce if desired.

Serves 8.
