Cumin Okra

Ingredients
32 pods fresh okra2 tsp cumin1 tsp pepper1 tsp salt (optional)4 tbsp water, dividedcooking spray
Directions
Wash and dry the okra.
Spray a nonstick skillet or saute' pan with cooking spray. Heat the pan on high heat.
Add the okra in a single layer and splash the pan with about 2 tbsp of water.
Without moving the okra, cook until the pods begin to turn a bright green.
Turn them over, and splash the pan with the remaining water.
After the water has evaporated, sprinkle with the cumin and black pepper.
Continue cooking, shaking the pan every few minutes, until the okra starts to char or spot.
Remove from heat, and sprinkle with salt before serving.

    This was a great recipe... with the following modifications:
    - I added a lot more spices (2x cumin, garlic salt to taste, 1 tsp fajita seasoning, 1 tsp chili spice).
    - Just after splashing the first water, I added about 3 tbsp. fresh-squeezed lime juice.
    I ended up eating the whole recipe! - 12/2/09

    This was easy to make. I had to cook half at a time, since not all the okra will fit in a single layer. And while I was eating the 2nd half, I munched on the entire 1st half. yum! - 9/9/09

    Simple simple to make (just heat and splash with water!).
    My husband and I loved the cumin okra. The cumin, pepper, and salt made a nice coating that was like a lighter version of the batter-fried okra.

    This is very good, I use frozen okra and just omit the first water and just let it go until it is dry, then add the cumin and other water. - 3/15/07

    O thanks, I love okra! This reminds me of the summer time grilled okra but better because there is no oil. The outdoor grill recipe uses a mixture of cumin, grated garlic, lemon juice and olive oil. You marinate okra in that and grill over open flames. I think next time I will try without the oil. - 9/26/10

    loved it! Very spicy and I LOVE spicy! If you don't like a lot of spice then I'd cut back on pepper a bit. I used frozen and omited the water too. I was expecting the cumin/pepper mixture to be like a batter and it was more like a seasoning. It just didn't look as "pretty" as fried does. lol - 3/26/08

    Very nice side dish & use of okra. The falvor was very good, it cooked up easily and both my husband and I loved it. I will reduce the salt & Pepper to 0.5 tsp each. Now I have a reason to say "yes" when my in-laws offer fresh Okra from their garden. - 8/8/11

    Really, REALLY good! Since I'm not a huge cumin fan, I mixed chili powder and some steak seasoning to the cumin before tossing it onto the okra. I used frozen okra, defrosted it and then added to pan and left it on quite some time to really char (not burn) it and also make sure sliminess was gone! - 10/12/10
