Oatmeal Chocolate Chip Pumpkin Cookies

1-1/2 cup brown sugar1 cup pumpkin puree1 Tbsp. vanilla1.5 cup flour1 cup quick oats1 Tbsp. baking powder1/2 tsp. salt2 eggs12 oz. bag chocolate chips
Preheat oven to 350. Spray cookie sheets with cooking spray. Add the pumpkin, vanilla, and sugar into a large bowl. Stirl together. Add the eggs, beat until fluffy. Add the flour, baking powder, salt and oatmeal. Mix until well combined. Fold in the chips. Place by spoonfuls onto cookie sheets about 1/2 inch apart. Bake for 10-11 minutes. Allow cookies to cool for a minute or two before removing from pan. Makes 48 cookies.
