Tammy's PA Dutch Potatoe Filling

Ingredients
Chop 2 ribs of celery and 1 med. onion small, place in a bowl with poultry seasoning, parsley, pepper and 3 Cups stale bread torn or cubed. Make mashed potatoes (6 cups)and use the 1/4 milk and 2 tbl. of Smart balance to mash. Crack 2 ex. lg.eggs into hot potatoes and beat well. Mix in 2 Tbl. Poultry seasoning,2-3 Tbl. Parsley. 1/3 tsp black pepper, onion celery and bread mixture. Blend well and put in baking dish. (I use large glass mixing bowl) Put remaining 1Tbl. of Smart balance on top in small clumps.
Directions
Pre heat oven to 350 degrees. Cover with aluminum foil and bake 30-40 min. Remove foil and bake 10-15 min more for a nice crust. This makes 12-14 larger servings
