Chicken Chili

1 onion, chopped1 16-oz can black beans1 16-oz can kidney beans1 8-oz can tomato sauce10 oz package frozen corn kernels (or 1 can)2 14.5-oz cans diced tomatoes w/chilies1 packet taco seasoning1 tbsp cumin1 tbsp chili powder24 0z. (3) boneless skinless chicken breasts
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Also try it with low fat cheese and sour cream (extra calories).

My entire family loved this recipe. I substituted one of the cans of diced tomatoes with chiles with diced tomatoes with onion and garlic. I will make this again. - 12/7/10
