Chocolate Brownie Pancakes

Ingredients
60 grams (1/2 c.) whole wheat pastry flour1 Tbs. unsweetened cocoa powder30 grams pumpkin puree1/2 tsp Ener-G egg replacer 1/8 tsp salt1 serving (17 grams) chocolate Jarrow Rice Protein powder1/3 cup unsweetened vanilla Almond Breeze6-8 drops Stevia (or 1 tbs granulated sweetener)1 tsp. vanilla extract (optional)1/2 tsp. chocolate extract (optional)dash cinnamon (optional)
Directions
Mix the dry ingredients (flour, cocoa, protein powder, egg replacer, salt, cinnamon), then turn on the heat on your pancake pan.

Now add the milk, pumpkin, Stevia and extracts, if using. Mix. Allow to rest about 10 minutes while your skillet heats up.

Drop batter by heaping spoonful onto the skillet and cook until bubbles form around the edges; flip to the other side to finish cooking.
