Lentil Soup

Ingredients
1 cup lentils2 lrg carrots chopped1 med onion chopped3 cloves garlic minced1/2 cup rice1.5 cups frzn corn2 tsp olive oil3 med potatoes, cut up1 cn tomato juice6 cups water1 cup chicken broth3 med celery stalks, chopped1 T thyme1 T salt1 T pepper
Directions
Saute onion & garlic in olive oil. Soak lentils with enough water to cover for about 15 mins. Rinse and drain add to onion & garlic after softened. Add remaining ingredients cook until potatoes and rice are tender. About 45 mins.
