agassifan gingerbread pudding (low fat)

4 cups fat free milk 1/3 cup polenta (ground corn)1/2 C oatmeal, dry1/4 C whole wheat flour1/3 C craisins --- or --- raisins/chopped dried fruit1/2 cup molasses or 1/4 cup molasses plus 1/4 cup dark corn syrup 1/2 teaspoon salt 2 pieces of crystalized ginger (minced) --- or ---1 TBSP ground ginger PAM for baking dish
1) Mince crystalized ginger.
2) Place 4 cups fat free milk (or soy milk for Vegans) in a medium sauce pan and whisk in the polenta, whole wheat flour, oatmeal, salt, craisins, crystalized ginger (or ground ginger) and molassas.
3) Heat mixture over medium heat for 20 minutes, whisking every couple of minutes so it doesn't stick or clump up,
4) Pour into a PAM sprayed 8 cup casserole dish.
5) Bake for 1.5 to 2 hours at 350 degrees, until set.
6) Divide into 6 servings and enjoy.
Makes 6 (scant cup) servings @ 216 calories.
