Oatmeal Pumpkin Breakfast Bars

Ingredients
4 c. quick cooking oats3/4 c. brown sugar1-1/4 c. milk3 tbsp butter2-1/8 tea. baking powder3/4 tea. salt2 tea. vanilla extract2 tea. cinnamon1 can pumpkin1/4 c. brown sugar (for top)
Directions
Set oven to 350 or 325 for glass pan.
Grease 9X13 pan
In large bowl, mix all ingredients except 1/4 c. brown sugar. and spread into pan.
Sprinkle 1/4 c. brown sugar on top.
Bake for 20-25 minutes.

    I was looking for an easy go to recipe with ingredients that I usually have on hand for busy mornings when my family is on the run. My 6yr. old loved them but then again oatmeal and pumpkin pie are two of her favorite things to eat. Will try to mix in nuts and dried fruits next time. YUM! - 8/17/12
