Triple Layer Terrine

Ingredients
1-1/2 Cups Brocolli Florets, 1 Large Cauliflower Florets, 1 lb Baby Carrots, 1-1/2 cups Egg Beaters, 10.6 oz Greek Yogurt, 1 tbsp Extra Virgin Olive Oil, 1 tbsp Fresh Chives, 1 tbsp Dried Cilantro
Directions
Preheat oven to 350, Slice baby carrots and saute in skillet with Oil and butter until soft, Steam Brocolli and Cauliflower florets separately for 15 min. each, Puree carrots and Cauliflower separately with 1/2 cup Egg Beaters and 1/3 of the Greek Yogurt, Spread puree separately in greased loaf pan, Puree the Brocolli with the same additives plus Chives and Cilantro then add to loaf pan, Place the loaf pan into a larger pan with water 1/2 way up loaf pan, Cook at 350 for 1 hr. 45 min. or until firm, Remove from oven and let cool to lukewarm and then unmold upside down, Sprinkle with shredded cheese, Slice into 8 servings and enjoy.
