Creamy Chicken and Mushroom Pasta sauce

Ingredients
120 grams skinless chicken breast, chopped1/4 large brown onion, finely sliced6 mushrooms, sliced1 clove garlic, finely chopped100ml light & creamy evaporated milk (98.5% fat free)3/4 tsp chicken stock powder1/2 tsp cornstarchoil spray1 tablespoon water
Directions
Mix stock powder with evaporated milk and set aside. Mix cornstarch with water and set aside.

Heat frying pan and spray with oil spray. Cook chicken pieces until just turning golden. Add onions and cook for 2-3 minutes until slightly softened. Add mushrooms and garlic and cook another 5 minutes.

Add evaporated milk mixture to pan and return pan to the boil. Add cornstarch mixture and simmer for 5 minutes or until thickened.

Serve over cooked pasta.
