Modified Chef Meg's Slow cooker Lasagna

16 oz (1 lb) hot italian chicken sausage1 jar low-sodium marinara sauce1/4 t red pepper flakes2 t dried oregano1 1/4 c water1 pound fat free cottage cheese1/4 c egg substitute(or 1 egg white)1 c shredded Italian blend cheese6 lasagna noodles, dried, no boil variety
Brown the chicken sausage in a skillet over moderate heat. Stir in red pepper flakes, thyme, tomato sauce, and water. In a bowl combine the egg substitute, cottage cheese, and Italian cheese blend. Place enough meat sauce to cover the bottom of slow cooker. Top with 2-3 noodles, broken to cover the meat sauce. Repeat layer. Top second layer with cheese mixture and finish with a top layer of the meat mixture. Cover and set slow cooker on low. Cook for 3 1/2 to 4 hours.

I used regular Italian sausage since I had it left over from holidays (S.O. bought it instead of sage sausage for dressing - whoops) so I needed to use it up. We were floored at how extremely good and easy this was! I forget why I chose this over Chef Meg's original recipe but I'm not sad I did! - 1/13/15
