Spinach Feta Quiche

Ingredients
2 tablespoon(s) light butter1 medium onion or onion seasoning10 ounce(s) (package) frozen chopped spinach, thawed1 1/4 cup egg beaters1 large egg1/4 cup skim milk6 ounce(s) reduced fat feta cheese, crumbled1/4 teaspoon(s) salt1/8 teaspoon(s) pepper9 (-inch) unbaked deep-dish piecrust
Directions
Preheat oven to 375 degrees F. Melt butter in skillet over medium heat. Add onion and cook for 4 to 5 minutes, until softened. Remove from heat. Squeeze excess liquid from thawed spinach; add to onion mixture and stir.

In bowl, whisk together eggs, milk, feta and salt/pepper; stir in spinach mixture. Pour into piecrust and spread evenly. Sprinkle some Parmesan evenly over top. Bake for 30 minutes, until puffed and lightly browned and center is set.
