----------------------Salad-----------------12 oz whole wheat dried pasta, cooked12 oz turkey breast, diced into 1/2 inch pieces1/2 cup craisins1/2 cup raisins1 large carrot, shredded3 medium celery stalks, sliced thin2 medium apples, dicedChopped walnuts (optional...not included in calorie count---------------- Dressing -------------------------2 Cups low fat plain yogurt4 tbsp Light mayonaise3 tsp dijon mustard1/4 cup cider vinegar1 dash salt2 tsp curry powder (or to taste...omit if you want)1 tbsp Splenda
1) Bring a large pot of water to a boil, cook pasta and drain. Rinse pasta under cold water to cool.
2) Plump raisins and craisins in a small bowl with hot water (drain before adding to salad).
3) Mix dressing ingredients together.
4) Mix cooled pasta with other salad ingredients and toss with the dressing.
Makes 10 generous 1 cup servings @ 282 calories per serving.
