Spinach patties

Ingredients
Frozen chopped spinach (1 large package)3 large eggs0.5-0.75 cup seasoned breadcrumbs (matter of preference)Smart balance light butter (tablespoon, or enough to fry)
Directions
Defrost spinach and combine with egg and breadcrumbs. Form into hamburger-like patties. Fry in a small amount of butter (just enough so it doesn't stick- I have tried other things and butter/margarine works/tastes the best). They are done when they are slightly browned.

    these turned out well but I did adjust some. 10 oz thawed spinach, 2 eggs, 1/2 cup italian seasoned panko crumbs & added 1 cup part skim shredded mozzarella. good with lox. - 1/5/16
