Chicken Parmesan

Ingredients
Chicken Breast Olive OilItalian Bread CrumbsEggPaul Newman's Marinara SauceMozzarella Cheese
Directions
4 - Chicken Breast bone and skin removed - 2 Whole or 4 Halves (large breast, I buy from Costco)
4 Tbsp Olive Oil
1 Jumbo Egg
1/2 C Italian Bread Crumbs
1 Jar of Paul Newman's Marinara Sauce
6 slices of Mozzarella Cheese Part Skim

Boneless chicken breast wash and pat dry. Pound to flatten as much as possible. Add olive oil to a frying pan and heat. Dip chicken in egg and then bread crumbs. Fry in olive oil until cooked (brown and cripsy). Add Marinara sauce and then top with Mozzarella cheese until melted.

Makes about 6 servings

I prefer Paul Newman's marinara sauce over any other but you can try your own favorite.

Serve with a salad or vegetable
