Veggie Udon Soup

Ingredients
* *Japanese-Style Udon Noodle (1/2 pkg fully cooked, Ohana Organic), 3 oz (remove) * Vegetable Broth, 6 cup (remove) * *Soy Sauce, 1 tbsp (remove) * Carrots, raw, 0.5 cup, chopped (remove) * Celery, raw, 0.5 cup, strips (remove) * Tofu, firm, 0.5 block (remove) * Scallions, raw, 0.25 cup, chopped (remove) * *Enoki (straw mushrooms), 100 gram(s) (remove)gingergarlic
Directions
start with a little broth, add broccoli, carrots, celery, ginger, garlic and whites of scallions. cooki until bright and somewhat softened.

add the rest of the broth, and soy sauce. simmer until flavors come together. add enoki and tofu. cook another 5 min.

enjoy! season with soy sauce or sriracha
