Salmon with Artichokes & Roasted Pepper

Artichoke Hearts - Unico Brand - 2 piecesTomato, grape - 12 tomatoesPacific Pink Salmon, 125 gram(s) Onions, raw, .25 cup, chopped Garlic cloves - 2 finely dicedPeppers, sweet, red, fresh, 1 medium Olive Oil, 1 tsp Vegetable Broth - Campbell's Brand 1/3 cup
Cut red pepper into strips, coat with 1/2 tsp olive oil and roast in 350 degree oven.
Saute onions and garlic in rest of olive oil until transluscent
Place salmon in the pan; season with salt & pepper.
Add vegetable broth, chopped artichoke hearts roasted red pepper and tomatoes (which have been cut in half).
Cover and cook until salmon done, approx 6 mins.

Can be served with brown rice, couscous (calories not noted), and roasted vegetables (ie. asparagus)
