Stuffed Delicata Squash

1 Small Delicata or other winter Squash1T i cant believe its not butter light2T chopped Shallots1 Clove Garlic1T chopped fresh sage2 Cups Spinach1/4 C pine nuts1 Large egg4 tsp Grated Parmesan cheese, divided
Preheat oven to 350*
cut squash in half lengthwise
In saute pan toast pine nuts, set aside
In same pan, saute shallot and garlic in I can't believe its not butter over medium heat until soft (about 3 min) add chopped sage and cook about 1 more minute until fragrant. Add greens and cook until wilted. Add pine nuts and set aside.
In a bowl wisk egg with 2tsp cheese. stir in shallot/pine nut mix
Stuff mixture in squash halves, sprinkle with remaining Parmesan cheese and bake at 350 for 45 minutes.
