Loaded Baked Potato Soup

Ingredients
6 cups diced potato1 cup diced carrot1 cup diced onion1 T oil3 T cornstarch8 cups chicken stock1 cup fat free half and half1 1/2 cups milkgarlicsalt & pepper to tasteGarnish withShredded cheddarcrumbled baconGreen onion
Directions
Cook onion, carrot, and 3 cloves of smashed, chopped garlic in oil until softened. Add potatoes and chicken stock. Cook until potatoes are soft. Add cornstarch to thicken and half and half and milk. Cook to warm milk/half and half. Salt and pepper to taste. Garnish with a small amount (1 crumbled slice) of bacon, shredded cheddar, and green onions. Enjoy!!
