Polenta with Cheddar

Ingredients
1 c. yellow cornmeal1 c. cold water1 t. salt3 c. water1 c. cheddar, shredded
Directions
1. Soak the cornmeal with the cold water and add salt.
2. Boil the 3 cups of water and add soaking cornmeal.
3. Bring back to a boil and simmer for approx. 25 min. stirring frequently until cornmeal becomes very thick.
4. Add cheese and pour into greased pan.
5. Refrigerate for at least 4 hours.
