Chicken stir fry with peanut butter sauce

2 tsp olive oil1 medium onion1 medium carrot6 or 7 mushrooms1 red pepper1/2 pound snow peas700g of chicken breast (about 2 breasts)1 tbsp curry powder3 tsp soy sauce2 tbsp lemon juice2 garlic cloves1/2 cup smooth peanut butter1/3 cup hot water1/3 cup honey1/4 cup soy saucetabasco sauce
Chopped the vegetables to taste
Sauté the onion and carrot in the oil, then add the diced chicken. Spinkle the curry powder, the tsp of soy sauce, the lemon juice and the garlic on top, and continue the cooking.
When the chicken is almost cooked, add the snow peas
After one or two minutes, add the mushrooms and the pepper for about 2 or 3 minutes.
Meanwhile, combine the peanut butter, the hot water, the honey, the soy sauce and the tabasco sauce in a food processor.
Pour onto the meat. Heat.
Serve!
