Cabbage, fresh, 1 cup, choppedSummer Squash, 1 cup, sliced Onions, raw, .5 cup, sliced Mushrooms, fresh, 1 cup, pieces or slices Carrots, raw, .5 cup, strips or slicesPeppers, sweet, red, fresh, 2 tbsp Olive Oil, 2 1tsp Broccoli, 1 cup choppedSalt, pepper, garlic powder to taste. If salt is added sodium content should be modified.
The main time is in slicing and preparing the fresh veggies. To a non-stick skillet and two tsps extra virgin olive oil and make sure all the surface is coated. Add seasonings to oil as desired. Over medium high to high heat, quickly stir-fry the vegetables to carmelize all veggies. When they are slightly softened but not cooked to limp stage, the dish is ready to serve. Makes 4 generous 1 cup servings
