Lentil Potato Curry

Olive oil spray1 cup chopped onion2 garlic cloves2 carrots1 tbsp curry powder2 bay leaves4 cups of fat free, low sodium vegetable broth1 can (28 oz) diced tomatoes1 cup lentils2 cups (approx. 400 g) diced red potatoes2 tbsp cilantro(You can use salt and pepper to season, but I don't)
Spray olive oil in large pan and heat. Add onion, carrots amd garlic and saute for 2 minutes over medium heat. Add curry and bay leaves and stir to coat. Add broth, tomatoes and lentils and bring to the boil. Reduce heat, cover and simmer for 30 minutes until lentils are tender. Add potatoes and simmer, covered for 15 minutes and uncovered for 15 minutes until tender. Remove from heat, discard bay leaves and stir in cilantro. Add salt and pepper to taste.

Exactly like recipe from Heart Healthy cookbook that I love. I added celery and crushed red pepper flakes. I like mine hot and spicy. Having for lunch over rice. My husband has small side dishes with , cucumber, peanuts, bananas, onion, chutney& tomato. Tropical fruits also good with this dish. - 5/2/13
