Bruschetta

2 large red tomatoes, chopped1 small onion, chopped1/4 c. basil (add more based on your preferences), cleaned and chopped2 cloves garlic, crushed1/3 c. extra virgin olive oilsalt to taste1 French Baguette (either white or whole wheat for a healthier option), sliced in about 1" pieces. 1 tbsp olive oil1/2 clove garlice
Mix tomatoes, onion, basil, crushed garlic, olive oil and salt in a large bowl. Let sit for about 30 minutes.
Preheat oven to 350* F.
Rub each slice of french bread with garlic clove and place on a cookie sheet. When all slices are placed, drizzle with olive oil.
Bake in oven for 5 minutes or until bread is slightly brown.
Place hot bread on a serving platter and top each slice with tomato mixture. Serve immediately.
