1 1/2 C whole wheat pastry or all-purpose flour2 C rolled oats3/4 C unpacked light brown sugar3/4 tsp baking soda1 tsp ground cinnamon3/4 C Sugar-Free Apricot preserves1/4 C water1 tsp vanilla3/4 cup unpacked raisins
Preheat oven to 275 degrees.
In large bowl, combine flour, oats, brown sugar, baking soda and cinnamon. Add preserves, water and vanilla and mix well. Fold in raisins.
Drop onto greased baking sheets by the teaspoonful and flatten slightly with the back of a spoon. Bake 18 minutes or until lightly browned. Enjoy!
