Fluffy Pancakes, Low sodium

Ingredients
Wheat flour, white, bread, enriched, 1 cupLeavening agents, baking powder, low-sodium, 1 TbspMilk, nonfat, 1 cupEgg Yolk, 3 largeegg white, fresh, 3 large
Directions
Heat griddle. Whip egg whites until stiff. Mix dry ingredients. Mix yolks and milk, stir into dry ingredients. Fold in whipped egg whites until no white streaks are showing. Pour pancakes on to griddle. Watch carefully as these tend to brown faster. Flip and brown. Use toppings to your own tastes...I like to simmer 1 cup of frozen berries with 1/2 of Splenda for a syrup. You can also use honey or agave, peanut butter, or cinnamon and splenda.
