Faux-Tomato Sauce with Tempeh

Ingredients
3 Onions Diced1 Butternut Squash, peeld and cubed4 carrots, chopped1 beet, peeled and chopped2 tablespoons Olive Oil3 cloves garlic, minced1 stalk celery, sliced16 oz white mushrooms, sliced
Directions
Put Squash, carrots, onions and Beet into a large sauce pan and almost cover with water. Heat to boil, covered, then simmer until soft, about 20-40 minutes
