Ingredients:Onions, raw, 1 cup, chopped (remove)Garlic, 1 clove (remove)*Wheat flour, white, all-purpose, enriched, calcium-fortified, .5 cup (remove)Milk, nonfat, 2 cup (remove)Sweet potato, cooked, baked in skin, without salt, 3 large (remove)*Horseradish, 2 tsp (remove)Cheddar or Colby Cheese, Low Fat, 2 cup, shredded (remove)Bread crumbs, dry, grated, plain, 1 cup (remove)Salt, 1 tsp (remove)Pepper, black, 1 tbsp (remove)I Can't Believe It's Not Butter, Light Spread (Soft), 1 Tbsp, 4 serving (remove)
In large saucepan, saute onion and garlic in butter, cook until tender, Whisk in flour, salt and pepper until blended. gradually add milk. Bring to boil; cook and stir for 2 minutes or until thickened. remove from heat; stir in sweet potatoes and horseradish.
Transfer half into 9in baking dish coated with nonstick cooking spray. Combine cheese and bread crumbs;sprinkle half over sweet potato mixture. Repeat layers. Bake uncovered, at 400 for 30 minutes.
