Cauliflower Gratin

Ingredients
3 cup cauliflower2 tsp olive oil1/2 cup chopped onion2 cloves garlic1 can no salt added diced tomatoes2 tbsp capers, drained1/4 cup parmesan cheese
Directions
Steam cauliflower for 6 minutes or until tender
heat oil in saucepan, add onion and garlic. Cook for 5 minutes on low heat. Add tomatoes and capers. Increase heat and simmer for 5 minutes.
Place tomato mixture in a 2 quart gratin dish top with cauliflower. Sprinkle cheese on top.
Place under broiler for 5 minutes or till top is brown.

Serves 4 as a side 2 as a main dish
