Sugar Free Sheila's Mock Mashed Potatoes

Ingredients
1 lb. bag of frozen cauliflower3 oz. cube of cream cheese1/4 cup of 2% cheddar cheese1 Tbsp Garlic powder (adjust to taste)Salt and pepper to taste1/3 cup reduced fat sour cream
Directions
Boil the cauliflower for 20-25 minutes. As the cauliflower boils, place remaining ingredients except for the sour cream in a large bowl. (The cream cheese does not need to be softened - it will melt.) Drain the cauliflower as well as possible. Put in the bowl on top of the other ingredients and mash the cauliflower with a fork. Add sour cream to the mixture. Continue to mash the cauliflower until it reaches your desired consistency.
