1 Box Catelli Express Oven-Ready Cannelloni (Dry)1 small onion, finely chopped1/2 cup cooked spinach1 1/3 cup light ricotta cheese1/8 cup parmesan cheese, grated1/4 cup mozzarella cheese, grated1 egg white2 T Basil2 T Parsley1 T Oregano1/4 t Nutmeg2 cups tomato sauce1 clove garlic, crushedPepper to season
Optional step: combine onion, carrot, and parsley in food processor to help hide veggies from picky kids and/or husbands.
Saute onion and 1 T fresh parsley until tender.
Combine ricotta, mozza, parmesan, egg white, spinach, onion mixture, nutmeg, 1 T basil, 1/2 T oregano in a large bowl. Add pepper.
Combine tomato sauce with garlic, remaining parsley, basil, and oregano. Pour half of mixture into bottom of an oven-safe dish.
Stuff cheese mixture into cannelloni tubes and place on top of tomato sauce. Pour remaining tomato mixture over the top and sprinkle with parmesan cheese.
Cover with foil and bake at 375 F for 30 minutes. Uncover and bake another 30 mins.
Makes about 16 cannelloni.
