Hawaiian Chicken Salad

Ingredients
1 chicken - cooked, cooled, & deboned (or you can use only your favorite parts of the chicken)1 c. long grain rice (cooked yields 2 cups)1 large can of Dole Pineapple Tidbits (drained)3/4 c. sliced almonds1 1/4 c. mayonnaise (can substitute low-fat)1 c. seedless red grapes (halved)Fresh lemon juice from 1/2 lemon1 tsp. curry powder 1 tbsp. finely chopped green onions
Directions
Boil chicken, then cool and debone. Cook rice and cool. Mix mayonaise, lemon juice, and curry powder together well and set aside. In large bowl add rice, grapes, almonds, chicken, onions, and pineapple. Mix well. Pour mayonnaise mixture over ingredients in bowl and mix well. Chill 1 hour before serving for best flavor, but salad can be served immediately.

This yields 8 (1-cup) servings and is great served the following day.
