Sugar Free Whole Wheat Brownies

Ingredients
1C Splenda for baking1/2C Margarine (for low-fat version, you can substitute 1/2C applesauce)2 Eggs1 tsp Vanilla3 Tbs Cocoa unsweetened1.5C Whole wheat flour1/2C Shredded Coconut unsweetened
Directions
Combine Splenda, margarine (or applesauce), eggs and vanilla together until smooth. Add cocoa and whole wheat flour and mix till all ingredients are wet. Pour into a 9X9 non-stick baking dish. Sprinkle coconut on top in an even layer. Bake at 325 degrees for 30 minutes. Cool, then cut into 12 equal squares.
** alternatives: substitute vanilla for 2 tsp of mint extract
or: add 1/2 cup of chopped nuts to the mix before baking
or: add 1/2 cup of peanut butter in the mix.
Play around, this is a great basic recipe to add to or enjoy as is.
