Crisp Peanut Butter Cookies

Ingredients
1 - Cup Shortening1 - Cup Granulated Sugar1 - Cup Brown Sugar1 - Cup Peanut Butter2 - Cups All-Purpose Flour (Sifted)1 - Teaspoon Vanilla Extract1 - Teaspoon Salt2 - Teaspoons Baking Soda8 - Tablespoons Peanut Butter Chips2 - Eggs (Beaten)
Directions
Pre-heat oven to 350 degrees. Mix dry ingredients. Using a mixer blend in the other ingredients until smooth. Make 48 balls out of the dough on a cookie sheet, leaving about 2 inches between cookies. Use a fork to mash down the top of the cookie. (Just enough to make indentions.)
Bake for 10 minutes. Allow to cool before removing from cookie sheet.

Makes 48 - 2 inch cookies.
