Double Chocolate Oatmeal Cookies

2/3 cup sugar1/3 cup non-hydrogenated tub margarine1/3 cup canola or peanut oil1 egg1 teaspoon vanilla1 teaspoon baking powder1 teaspoon baking soda1/4 cup unsweetened baking cocoa1/2 cup bittersweet (or semi-sweet) chocolate chips3/4 cup whole grain white flour3/4 cup quick or old fashion oats
1. Preheat oven to 350
2. Mix fats (oil, margarine) with sugar until well incorporated
3. Mix in egg and vanilla extract
4. Mix in baking powder, baking soda, cocoa and chocolate chips
5. Mix in flour and oats
6. On ungreased baking sheet spoon drop tablespoon size cookies
7. Bake for 10 minutes
8. Let cool
