White Chocolate and Cranberry Granola (1 oz. servings)

1 quart Old Fashioned Oats (organic preferred)3 cups Rice Krispies4 oz. of Walnuts (large chunks)1/2 cup brown sugar1/2 cup oil1/2 cup honey1 cup white chocolate chips1/3 cup dried cranberries4 oz. pecans, choppeddash of cinnamon1/2 tsp. salt
Preheat oven to 325 degrees
Mix Oats, Rice Krispies, pecans, cinnamon, and salt together in a large bowl. Caution, do not add the dried fruit until granola is baked!
In a 1 quart pyrex pitcher, add oil, honey, 1/2 cup of the white chocolate chips and brown sugar and microwave for about 2 minutes, until hot and bubbly. Mix to dissolve sugar and then slowly pour over the dry ingredients and mix thoroughly.
Pour out onto cookie sheets ( the kind with sides). Using a silpat is best, but not absolutely necessary.
Place in oven and stir in sides of pan and redistribute, as the mixture starts to brown, about every 3-4 minutes. It is done when golden but be careful not to over cook as it will ruin the taste. This should take about 10-20 minutes, depending on the kind of pan and your oven.
Remove from oven, press down with a large spoon and let thoroughly cool, BEFORE stirring. When cool, it will be congealed in large sheet like pieces. Break it up, leaving larger chunks, if you like it chunky. If not, break it up into small pieces. Add the dried fruit and the other 1/2 cup of white chocolate.
