Nalesniki - crepes - polish

Ingredients
Directions
cinnamon, applesauce, salt, splenda, milk, eggs, wheat flour
1. Combine flour, egg, and egg yolk in a small bowl with
electric mixer - beat just to mix. Add milk, sugar, and salt – beat at low speed for 2 minutes.
2. Heat a small fry pan OR nonstick crepe pan and brush bottom with oil OR nonstick spray.
3. Pour approximately a ¼ cup of batter into pan and at the same time, tilt pan to spread batter evenly over bottom of the pan. When edges are dry and there is no shine on top of the nalesniki, turn and cook other side.
4. Repeat until all batter is used,
5. For stuffed pancakes, place 1 heaping tablespoon of filling in center and spread evenly over nalesniki…roll crepe.
6. Sauté rolled nalesniki in small amount of butter/margarine turning to other side quickly…remove from pan and serve. (Or you can place crepes in oven at 250° for 5 to 10 mins after they are filled and rolled)
Optional: sprinkle powdered sugar over top (this will change the nutrional values though).
