1 Marrow cut into 3" rings, remove skin and scoop out seeds6 Sausages - skin removed1 onion, chopped1 tsp olive oilSage
Serves 2 - 3
Prepare marrow and place in baking tray. Cut in slices so you end up with 4 or 5 rings with hollow centres.
Fry onion in olive oil until golden, add sausage meat and herbs (I like sage but you can use anything) and fry until cooked. When frying break up sausage meat so you end up with small pieces of fried sausage and onion mixed. If you have a large marrow and want to bulk out the mixture, you can add fresh breadcrumbs (3 - 4 slices whizzed is nice) to the raw sausage meat.
Place the cooked sausage and onion (and breadcrumbs if used) into the marrow centres. Cover with tin foil and bake at 180C for 1.5 - 2 hours. Remove the foil about 20 minutes before the end to crisp up the tops.
Serve with lots of green veg.
