Tangerine Muffins

2 cups all-purpose flour1/2 cup granulated sugar2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt1 cup plain yogurt1/4 cup butter or margarine, melted1 large egg1 tablespoon grated tangerine peel1 cup diced tangerine
1. In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt. Set aside.
2. In a medium bowl, stir together yogurt, melted margarine, egg, grated tangerine peel, and diced tangerines. Pour tangerine mixture into flour mixture and stir just until combined. Spoon the batter into a greased muffin tins, filling 2/3 full.
3. Bake in 400°F (205°C) oven for 18 to 20 minutes, or until lightly browned. Cool for 5 minutes before removing to a wire rack to finish cooling.
Makes 1 dozen muffins.
