Crunchy Chicken Salad

5 ripe plum tomatoes4-5 oz cooked chopped chicken breast1 cup chopped fennel bulb1.5 T roasted salted sunflower seeds2 T raisins1 T cider vinegar, 2 tsp mustard, 2 T Hellman's light mayo, salt and pepper (or all to taste)
Makes roughly 3 servings (of 3 tomato halves each)
1. Halve plum tomatoes, scoop out insides to form "shells".
2. Combine the rest of the ingredients.
3. Put the salad in the tomato shells and chill.
